Did you say- Avocado Cheesecake?

Avocados in a cheesecake. Madness I hear you scream!! If mad tastes this good then I’m afraid everyone here in The Aquarian are stone Bonkers! We all agree this little recipe is a keeper. Fancy giving it a go? Here’ how


Base Layer
Cashews x 300g
Dates x 100g
Cacao powder x 2 tbsp
Coconut Oil (melted) x 2 tbsp
Top Layer
Lime zest x 1
Lemon juice and zest x 2
Avocados x 3
Agave/Honey x 100ml
Coconut Oil (melted) x 8 tbsp

Lets start with the base, first blitz the cashews in a food processor into a crumb. Add the dates and cacao next. Then add the melted coconut oil next and mix all together for a minute or so. Scrape out the mixture into a cake tin. Base layer done, good job.

Now for the top layer. Spoon out the flesh of the avocados into a food processor along with the agave, coconut oil, zest of a lime and juice/zest of lemons. Mix together for a minute until its a smooth texture. Add this layer on top of the base layer and let it sit in a fridge for at least 2 hours so it hardens.
